燕鱼炖粉
[size=4][color=SeaGreen]燕鱼炖粉[/size]
原料:燕鱼(这是俺们这里的俗称,学名叫做鲅鱼)、宽粉条
配料:葱、姜、蒜、肥猪肉、糖、盐、酱油、醋、料酒
作法:
1、将油倒入锅内烧热后,放入一汤匙白糖,待糖熔化后,放入鱼块。
大厨师手太快,还没等猫妈照完,第一块鱼就下锅了。
据大厨师讲:这糖一定要先放,这样做出来的鱼不但颜色好看,而且不会粘锅。
2、将鱼均匀地放入锅内煎至金黄。
3、翻面再将另一面也煎好。
4、将鱼的两面都煎好后,放入其余的配料。
放肥猪肉是为了让汤汁更加美味,不喜欢的也可以不放。
5、添入适量的水。
水的多少要根据粉条的量来定。
6、将粉条放入锅内,待开锅后,关小火炖熟。[/color][/size]

中国菜讲究色香味俱全,这道菜香味都有了,就是卖相不好,不过日常菜倒是不讲究那么多了
