建议楼主把鱼片用盐腌20分钟,然后放开水里搽一下.最后再用你做的调味汁勾兑.这样鱼片应该会更嫩点.

做鱼片最好不用鲢鱼,因为它的刺儿比较多会影响口感。做鱼片最好用草鱼或者是鲤鱼,因为他们的刺儿都比较少,当然如果不考虑成本的话 ,鳜鱼也是不错的选择。

鱼片过水更滑嫩,草鱼也不错的。鱼刺少的鱼比较合适做这个菜的。
