广式烧味——脆皮烧肉、蜜汁肋条

[font=Helvetica][size=10.5pt][font=宋体]就干,直接上超市买五花肉来做。逛了一圈,发现超市的五花肉都带骨头的,可是这个烧肉是不带的也,怎么办了。想想干脆一半拿来做烧肉,一半拿来做蜜汁肋条好了,这样就一下子可以吃到[/font][/size][/font][font=Helvetica][size=10.5pt]2[/size][/font][font=宋体][font=Helvetica][size=10.5pt]种烧味了,真是太爽了,嘿嘿。下面就来说说做法吧。[/size][/font][font=Helvetica][size=10.5pt][/size][/font][/font]

[font=Helvetica][size=10.5pt]1[/size][/font][font=宋体][font=Helvetica][size=10.5pt]、五花肉洗净,冷水下锅,加葱姜,慢慢煮到肉变色,用筷子扎下,没有血水溢出;[/size][/font][font=Helvetica][size=10.5pt][/size][/font][/font]
[font=Helvetica][size=10.5pt]2[/size][/font][font=宋体][font=Helvetica][size=10.5pt]、煮好的肉立即捞出,用冷水冲一下,是外部稍微冷却,用毛巾吸干水分;[/size][/font][font=Helvetica][size=10.5pt][/size][/font][/font]

[font=Helvetica][size=10.5pt]5[/size][/font][font=宋体][font=Helvetica][size=10.5pt]、凉干的肉后,在肉皮上洒一撮盐,涂上小苏打;[/size][/font][/font]
[font=宋体][font=Helvetica][size=10.5pt]6、将五花肉翻转。在瘦肉一边切几刀,然后涂上剩余的调味料,腌制一晚上;[/size][/font][/font]
[font=宋体][font=Helvetica][size=10.5pt]7、将腌好的五花肉用竹签串起来,再用锡纸将肉的四周包严实,只留肉皮在外面;[/size][/font][/font]
[font=宋体][font=Helvetica][size=10.5pt]8、烤箱预热250度,最上层烤30分钟;[/size][/font][/font]
[font=宋体][font=Helvetica][size=10.5pt]9、取出烤好的肉,用刀将表面的黑色焦化物刮干净;[/size][/font][/font]
[font=宋体][font=Helvetica][size=10.5pt]10、在肉皮上刷一层油,烤箱200度,中层烤10分钟,即可;[/size][/font][/font]
[font=宋体][font=Helvetica][size=10.5pt]11、最后等肉稍凉后切片,沾白糖食用。[/size][/font][/font]

广式的口味比较偏甜,我是比较爱吃,可北方人就不一定都吃的惯了,但广式的东西做的都很精致,也挺荤的,所以很馋人
