燕皮是将猪瘦肉用木棒捶成肉茸,放入上等甘薯粉,制成薄如纸张的片状食品,又称肉燕皮。福州肉燕皮创于清末光绪年间。成品燕皮色白质香,平滑细润,脆嫩爽口,可切成丝状煮食,是福州特有的风味小吃。

我用的是夹心肉现铰的肉馅《粗铰》,再用刀手工剁几下,边剁边加泡制好的姜葱水,《有人也喜欢加入熬好的汤汁,使其味更鲜》盐、胡椒、几粒糖《吊鲜头》搅成稀糊状,似水无水……
